Quick Sugar-Gluten Free Pineapple Pudding
Hi Between my husband and myself we can’t tolerate, gluten, sugars, dairy, yeast. I’ve included a couple of our favorites.
I substitute-Baking powder – with vitamin C crystals
Sugars of any kind – with applesauce, or stevia and on occasion Xylitol or I’ve even completely elimated the sweetener (sugar) from the recipe butter/margarine – with olive oil or coconut oil

Ingredients:
1 small can crushed pineapple
1 1/2 c rice milk
2 T. tapioca minute
2 t vanilla GF
1/2 c berries ( garnish optional)
Method:
Combine tapioca and milk in saucepan, soak for 5 minutes, add other ingredients.
Cook this over medium heat stirring frequently.
Turn heat down, when it simmers, stirring until thickens about 10 minutes. Mixture should be clear.
Pour into cups. Serve chilled with berries as a garnish if desired.
