Joan’s Story
I WAS DIAGNOSED WITH CELIAC AT AGE 56 AFTER ALMOST 4 WEEKS OF CONSTANT DIARRHEA AND 15 LBS WEIGHT LOSS.
I ENDED UP BEING ADMITTED TO THE HOSPITAL AND HAVING ALL SORTS OF BLOOD TESTS, CULTURES, CT SCANS AND XRAYS.
ON THE LAST DAY THERE, A BLOOD TEST WAS DRAWN THAT DIAGNOSED CELIAC. Tag OF 150. I HAD THE SMALL BOWEL BIOPSY THAT CONFIRMED IT.
IT HAS BEEN A REAL PAIN DEALING WITH IT, BUT I HAVE NOT KNOWINGLY “CHEATED” SINCE THE DIAGNOSIS WAS MADE.
ONE OF THE THINGS I MISSED MOST WAS A GOOD OLD HOT DOG WITH CHILI IN A NICE SOFT BUN THAT DIDN’T FALL APART. I FINALLY DISCOVERED THAT THE GLUTEN FREE KINNIKINNICK HOT DOG BUNS ARE REALLY AS CLOSE TO “THE REAL THING” AS YOU
CAN GET IF YOU HEAT THE BUN IN THE MICROWAVE WITH A CUP OF WATER SITTING IN THE MICROWAVE. ABOUT 20 -30 SECONDS AND YOU’VE GOT A SOFT PLIABLE BUN!
I ALMOST CRIED WHEN I DISCOVERED THIS EASY STEP AFTER HAVING ALL MY PREVIOUS EFFORTS FALL APART AND MY WEINER AND CHILI END UP IN THE PLATE.
IF YOU HAPPEN TO BE AS BIG A HOT DOG FAN AS I AM, YOU’LL APPRECIATE THIS. BY THE WAY I USE THE HEBREW NATIONAL LOW FAT WEINERS.
I THINK EVEN OLD MATLOCK WOULD LIKE MY HOT DOG SUCCESS STORY!!
