Gluten Free Warming Winter Soup

This cake can be cooked in a 30cm cake tin for a flat cake or a 26cm tin for a deeper cake. If baking the deeper cake increase the cooking time by approximately 20 minutes. Serves 12-16

1 LARGE CHOPPED ONION
1 GARLIC CLOVE
2 BACON RASHES CHOPPED
2 CELERY STICKS CHOPPED
4 POTATOES (CHOPPED & PAR-COOKED IN MICROWAVE)
2 CUPS WATER
MASSEL GLUTEN FREE VEGETABLE CUBE CRUMBLED
TIN CORN NIBLETS
TIN COCONUT CREAM
2 CUPS LITE MILK
CHOPPED CHILLI (DEPENDING IF U LIKE IT HOT)
1 TEASPOON GARAM MARSALA
2 TEASPOONS CURRY POWDER
2 TEASPOONS TUMERIC
SALT & PEPPER

Method:

IN A POT PUT ONION CLOVE BACON & CELERY
COOK UNTIL TRANSPARENT
ADD THE POTATOES WATER & STOCK CUBE
SIMMER GENTLY FOR 10MINS
THEN ADD REST OF INGREDIENTS, SIMMER GENTLY STIRRING OCCASIONALLY WITH LID ON – FOR ABOUT 10MINS
