Gluten Free Veggie Curry

For those who can’t have nightshade vegetables on top of gluten, here is a recipe for a yummy vegetable curry I made up! Hope you enjoy and God Bless…

Ingredients:

1 chopped zucchini,1 diced sweet potatoes,1 cup diced pumpkin,1 bunch chopped broccoli,1/2 chopped cauliflower,1 onion diced,1 can coconut cream {please check labels}, 2 tablespoons g/free curry powder,1 tablespoon turmeric, a little white vinegar to make a paste, some fresh coriander.

Method:

Fry onion till brown, add pumpkin and sweet potatoes, cook for 5 mins then add remaining vegetables.
Make a paste with the spices and add to the vegetables. Pour in the coconut cream and turn down to simmer.
covered till tender (about 20mins)
