Gluten Free Tempura Vegetables
Hi, I’ve only been recently diagnosed as gluten intolerant, so I’m afraid I’m still learning the ropes.
But a recipe I’ve used for years that thankfully is totally gluten free and is one of my all time favorites is: TEMPURA VEGETABLES
From – Shelley Smith
Ingredients:
Broccoli, cut into floret’s, stems sliced thinly into batons or sticks. Carrots, peeled, topped and tailed, cut into batons or sticks.
Parsnips, peeled, topped and tailed, cut into batons or sticks.
Assorted Mushrooms, cut into even size pieces.
Sweet Potato, peeled, topped and tailed, cut into batons or sticks.
Green Beans, topped and tailed.
Sugar Snap Peas, topped and tailed.
Tiger Prawns uncooked but cleaned and shelled (optional).
Very cold fizzy water.
Rice Flour.
Frying Oil.
Wasabi Paste or powder.
Gluten Free Soya Sauce.
Method:
HEAT THE FRYING OIL AND ENSURE ALL VEGGIES HAVE BEEN DRIED OFF, IN A BOWL, ADD RICE FLOUR WITH A SMALL AMOUNT OF ICE COLD FIZZY WATER TO MAKE A BATTER…IT SHOULD BE LIKE A PANCAKE BATTER IN CONSISTENCY.
DIP VEGETABLES INTO THE BATTER, AND THEN GENTLY PUT INTO THE FRYING OIL
TO COOK. DO NOT OVER FILL THE PAN OR THE ITEMS WILL STICK TOGETHER.
THE BATTER WILL TURN A GOLDEN BROWN WHEN DONE, BUT MAKE SURE TO TURN THE ITEMS SO THAT YOU GET AN EVEN AMOUNT OF COOKING ON BOTH SIDES. DO THE SAME WITH THE TIGER PRAWNS. WHEN ITEMS ARE COOKED, PLACE ONTO PAPER TOWELS TO DRAIN.
TO CREATE DIPPING SAUCE, STIR IN WASABI PASTE INTO SOYA SAUCE TO TASTE.
USE SMALL AMOUNTS OF WASABI UNTIL YOU FIND A LEVEL YOU LIKE. SERVE VEGETABLES AND/OR PRAWNS WITH RICE AND DIPPING SAUCE AND ENJOY.
I’VE NOT GIVEN THE QUANTITY TO USE AS IT DEPENDS ON HOW MANY YOU ARE FEEDING. HOWEVER, I WOULD SUGGEST THAT YOU USE MORE THAN YOU THINK YOU WILL EAT, IT’S DELICIOUS AND PEOPLE WILL FIND THEY EAT FAR MORE THAN ANTICIPATED. HAPPY EATING!!
I hope that this is useful, it’s one of my husband’s favorite meals and he even enjoys cook it! I’m happy to share more recipes that we find as we go, I thought being a vegetarian made it difficult when we went out for meals or over to friends…but that is a breeze compared to trying to find things that are gluten free!!
Oh what I wouldn’t give me a loaf of light fluffy white bread lol but I’ve already given up hope…here in the UK I’ve tried loads and nothing comes close.
Anyway, I hope that this recipe is of use…you can alter veg and choose other ones, but these are the ones we enjoy, and most are used when cooking the Tempura in Japan.
