Gluten Free Southern Oven ‘Fried’ Chicken

Here is my favorite gluten free recipe:

Ingredients:

½ c. buttermilk
1 1/2 c. Natures Path cornflakes or other gluten free cornflakes, crushed
3 T. rice flour
¼ t. salt
¼ t. pepper
4 t. canola oil
4 skinless, boneless chicken breasts or thighs

Method:

Preheat the oven to 400°; spray a large baking sheet w/Pam. In a large shallow bowl, add the buttermilk. On a sheet of wax paper; combine the cornflake crumbs, flour, salt & pepper. Dip the chicken in the buttermilk, then dredge in the cornflake mixture, coating completely. Place the chicken on the baking sheet; drizzle w/the oil. Bake 30 min.; turn the chicken over. Bake until cooked through, 15-20 min. longer.
