Gluten Free Sombrero Pie

Ingredients:

1 lb ground beef
1 large onion, chopped
2 1/2 cups tomato juice
1 package (10 oz) corn
1-2 Tbsp. chili powder
1/4 tsp pepper
Cornbread recipe below

Cornbread Mixture recipe:
2 Tbsp. melted shortening
2 tsp. gluten free baking powder
1 tsp. salt
1 egg
2 cups yellow corn meal
1 tsp soda
2 Tbsp. honey (optional)
1 3/4 cups buttermilk (may substitute water)

Method:

In large skillet, cook and stir meat and onion until meat is brown and onion is tender. Drain off fat.

Stir in remaining ingredients, except cornbread mixture. Heat to boiling; reduce heat and simmer 10 minutes. Heat oven to 400 F. Prepare cornbread mixture below.

Pour meat mixture into un-greased baking dish,13×9. Cover with cornbread mixture; seal to edges of baking dish. Bake 30 to 35 minutes or until brown..

Mix corn meal, baking powder, soda. salt, and honey; add egg and buttermilk. Batter should be thick.

Add melted shortening to batter and put batter onto meat mixture and bake in 400 F oven for 30 to 35 minutes or until brown.
