Gluten Free Shepherd’s Pie
This is a great recipe that I enjoy regularly. Louise Marshall.
Ingredients:
1 pack lean mince
1 onion, chopped
1 carrot, chopped
Frozen peas
3 large potatoes, chopped
2oz cheese
1 gluten-free stock cube
A little milk and butter for mashing potato
Method:
Preheat the oven to Gas Mark 4.
Gently brown the mince in a saucepan, adding a little stock as required.
Add the onion, carrot, peas and the rest of the stock and simmer for 20 minutes.
Meanwhile, boil the potatoes until soft, drain and mash, adding the butter and milk, until you get a smooth mash.
Place the cooked meat mixture into an oven-proof bowl and top with the mashed potato.
Sprinkle with the cheese and bake in the oven for 25-30 minutes, until the cheese is melted and golden.
