Gluten Free Scalloped Potatoes and Ham
This is a time-saver for the gluten-free cook, for it makes its own sauce.

Ingredients:
4 large potatoes, peeled and sliced thin
1 cup cooked ham, cut into slivers
Salt and pepper to taste (onion salt gives extra flavor) but I use onions
2 cups milk or non-dairy liquid
3 tablespoons sweet rice or white rice flour
1/2 cup GF mayonnaise
Method:
Layer potatoes and ham in 1 12-quart casserole, adding salt and pepper to the layers.
In a bowl, mix a few tablespoons of the milk with rice flour and mayonnaise.
Blend with whisk until smooth. Then add remaining milk. Blend again until smooth. Pour over the potatoes.
Bake in preheated 350 degree oven for 1 hour, or until potatoes test done and the sauce is bubbly and thick.
Makes 5 or 6 servings.
