Gluten Free Savoury Slice
Hi Peter, I just love this recipe and I cook it at least once a week, I hope everyone enjoys it as much as I do!

Equipment:
Oven
Hot plate
Slice tray
Saucepan
Big spoon
Ingredients:
200g frozen spinach
1.5-cup polenta (corn meal)
1 litre water
Olive oil
Salt
Toppings
(capers, anchovies, tomato, etc.)
Method:
1. Break up spinach and add to water and salt in saucepan
2. Bring to the boil
3. Reduce heat
4. Slowly add 1-cup polenta stirring continuously (Watch out it doesn’t splutter as
it gets thick)
5. Remove from heat
6. Gradually add remaining polenta until very thick
7. Spread into oiled tray
8. Lavish with fancy toppings
9. Bake in hot oven until lightly browned
Use this simple recipe as a base for your own variety of savoury slice or even pizza. It is a great hot, but I like it even more in my lunch box the next day straight out of the fridge!
