Gluten Free Quick Sugar Free Pineapple Pudding

My favorite recipe so far -

Ingredients:

1 can crushed pineapple
1-1/2 cups soy milk
2 tablespoons tapioca
2 teaspoons vanilla extract
1/2 cup berries

Method:

Mix pineapple w/juice, soymilk and tapioca in a pot and heat over med. heat. Stir frequently. Turn heat down when it begins to simmer. Stir until thickened.

About 10 minutes and mixture becomes clear. Pour into cups and garnish with berries.
