Gluten Free Pudding

Hi, I have been on a gluten free diet for about a year now and this is my favorite gluten free recipe, I like a little desert now and then and this is one that is diabetic friendly also.

Ingredients:

1 tub of drink mix like crystal Light ,orange, lemon, cherry or lime. 4 cups water, 2-4 tsp xanthan gum

Method:
Put water in blender and pour in drink mix. Put in xanthan gum and blend until thickened. Pour into dishes top with whipped topping and enjoy!

This is very filling and good too. You can also make chocolate pudding this way too. Use milk and chocolate, vanilla and sweetener The consistency is a lot like instant pudding.
