Gluten Free Peanut Butter Cookies

Hi Peter… thanks for the info on your website… very interesting. For chocolate lovers add a Hershey’s Kiss to each cookie when the cookies come out of the oven… Great for Christmas and Valentine’s Day:

Ingredients:

2 cups peanut butter (crunchy is best)
2 cups packed brown sugar
2 eggs (slightly beaten)

Method:

Preheat oven to 350 degrees
Mix brown sugar and eggs together, then add peanut butter one cup at a time until mixed thoroughly. Drop by generous spoonfuls onto an un-greased cookie sheet, and bake 12-15 min. at 350 degrees. After baking, put on baking rack for 5 minutes, then with spatula remove each cookie and put on another baking rack to cool…. Very easy, and delicious!
