Gluten Free Peanut Butter Cookies

Ingredients:

1/2 cup Butter or Marg
1/2 cup sugar, 1/4 cup brown sugar
1/2 cup good quality peanut butter (I use Skippy)
1 whole egg
1 teas vanilla
1 1/2 cup GF flour(I use Bob’s Red Mill all-purpose baking mix)
dash salt 1/2 teas baking soda
1 1/2 teas xanthan gum

Method:

Cream butter and sugars then peanut butter, beat til blended, add egg beat til light 2-3 mins. Add vanilla, last add flour, baking soda, salt and xanthan gum a little at a time, beat only until smooth.

Measure 1 teaspoon of dough and shape into ball.(this dough is very light and you have to work quickly
and gently with your hands) Place 1 inch apart on a non-stick or lightly buttered cookie sheet. Mark with fork

Bake 15-20 mins.at 350 until lightly browned. Watch closely last few mins as these can burn quickly. I alternate ovenracks when cookie baking time is half done.

Makes 48 crispy delicious cookies!
