Gluten Free Oven Baked Rice

Peter, my 14yr old daughter was recently diagnosed with Coeliac Disease and I have been adapting my recipes where possible to suit her gluten free diet.

Ingredients:

Put together in a casserole dish with tight fitting lid:
1 cup parboiled rice *
2 cups cold water
25g butter
2 tsps gluten free green herb stock, or 1 tsp salt

Method:

Cover the dish with foil before putting on the lid.
Bake at 180oC for 1 hour.

Variation: Add 1-2 cups chopped carrots, if you want an extra vegetable with the rice.

*Parboiled rice can sit in cold water for some time with no ill effects so it is a handy recipe to use in an automatic oven, if you want to set it to cook later.
