Gluten Free Orange Almond Cake

Ingredients:

3 small oranges
375g whole blanched almonds
11/2 tsp baking powder
7 eggs
325g  castor sugar

Method:

Boil the oranges in water for 1 hour or until very soft.
Remove and set aside to cool.
Puree the oranges.

Process the almonds to a medium fine texture and combine with the baking powder.
Beat the eggs and sugar until they are thick and pale.

Fold in the oranges and almond mixture.

Grease and line the bottom of a 28cm spring form pan.

Bake on the centre shelf of a 350 oven for about an hour or until the cake is firm.
