Gluten Free Muffins
Everyone likes muffins, and these taste absolutely lovely. They go so well with morning coffee or afternoon tea!

Ingredients:
Mix:
3 eggs
½cup butter/oil
½cup Soy/Rice milk
½cup honey (brown sugar)
2t Vanilla
2 t Baking Soda (bicarb)
Combine:
1½cups grated carrot
1½cups grated apple
¾ cup coconut
½cup chopped dates
½cup chopped nuts (pecan)
2 cups gluten free flour
2t Ground cinnamon
Pinch of salt
Method:
Mix together and bake in muffin pan at 180ºC for 25 minutes. Makes 12 big muffins.
Can be frozen and reheated for 20 sec each in the microwave.
