Gluten Free Meatloaf (small)

I keep them in the freezer all the time, for that “drop in company” at the last minute. Also when I am mixing this I double the amount to make 24. It is so easy and really has a good taste.

Ingredients:

1 ½ lb. lean ground beef
½ cup gluten free oatmeal
1 egg
¼ cup milk
1 cup shredded cheddar cheese
Onion – minced [to your taste] optional

Method:

Mix all together then shape into large egg shapes
Makes about 12

This can be frozen on cookie sheet and then transferred to freezer bags. Take out of bag – place in a baking dish and cover with mixture of the following.

Catsup – brown sugar – mustard to your taste that has been mixed together.

Cover with aluminium foil.

You can put 4 – 6 in a baking dish in an oven 350 degrees for 1 hour.

[When you want to bake them, you do not need to thaw them out.]
