Gluten Free Macadamia Truffles

Ingredients:
200gms/7oz white chocolate
125gms/4oz Philadelphia cream cheese
1 tablespoon honey
1 teaspoon vanilla essence
20 macadamia nuts
1/4 cup coconut
1/2 cup coconut extra for rolling
Method:
Melt chocolate in double saucepan.
Beat cream cheese, honey and vanilla with electric beaters until smooth.
Stir in coconut. Refrigerate until firm.
Roll mixture around macadamia nut to form ball. Roll in extra coconut and refrigerate again.
