Gluten Free Impossible Pie (coconut)

I have made this for years, just changed the flour to GF last year and it tastes just as great.

Ingredients:

6 eggs, well beaten 3 cup milk
2 1/2 cup sugar 1/2 cup butter, melted
1 cup flour (Red Mill GF flour) 2 tsp vanilla
1/4 tsp baking powder 2 can (7 oz) flaked coconut

Method:

Beat eggs thoroughly. Blend in sugar & flour. Add remaining ingredients & mix well.

Pour into two butter 9″ pie plates and bake at 340 deg. for 30-40 minutes or until the knife inserted in center comes out clean. When finished, the flour is on the bottom as a crust.
