Gluten Free Green Pie

Ingredients:
200g sifted chick pea flour,100g butter,1 large avocado, 50g pumpkin seeds, 25g shelled pistachio nuts,100g spinach chopped,1/2 teaspoon dried marjoram, 4 eggs, 450ml milk, salt/pepper to season
Method:
Preheat oven to 160dg Celsius.
Rub the butter into the flour until you have a sandy consistency.
Add enough water to make a stiff dough and roll out.
Line a flan dish with the pastry and weight it down with dried beans or rice, bake blind covered with foil inside for 10 minutes, then remove foil and beans and bake another 10 minutes.
Peel and stone the avocado and chop the flesh into reasonable size pieces.
Put the avocado, pumpkin seeds and pistachio nuts into a bowl.
Add the chopped spinach and marjoram.
In a separate bowl beat the eggs, add the milk and season well.
Pour into the spinach mixture, mix well and spoon into the prepared flan case.
Bake in the oven for 35 minutes or until pie is set and slightly risen.
Serve warm or cold.
