Gluten Free Funnel Cakes

Ingredients:
Oil
3 cups of (Pamela) Pancake & Baking Mix
2 eggs, beaten lightly
1/2 cup milk
Powdered sugar
Method:
Preheat Oil.
In large mixing bowl combine baking mix, eggs and milk.
Beat with electric mixer for about 3 mins.
Spoon batter into a baggie. Snip the corner & pipe the batter into hot oil.
Moving in a spiral motion.
Fry until brown.
Drain & dust with powder sugar or dip in syrup.
