Gluten Free Frying Pan Bread
This is an excellent quick recipe. It has a texture sort of like crumpet, pikelet and scone combined. Great eaten straight away or left to cool and split for fillings [like pannini]. It is delicious!

Ingredients:
1 cup rice flour
1/3 cup soy flour
1 1/2 tsp gluten free baking powder
1 cup milk
1 egg, slightly beaten
1 tsp margarine
1/4 tsp salt
Method:
Put 24 cm cast iron frying pan onto low heat before you start mixing ingredients.
Sift dry ingredients. Make a well then add the combined egg and milk.
Whisk until well mixed.
Put 1 tsp olive oil into pan and pour in the batter.
Cover and cook until surface is bubbly and dry.
Turn and cook until brown underneath.
Cut into quarters.
