Gluten Free Fruit Cake

Ingredients:

1/2 pint of hot tea, made with 2 tea bags,
10 oz sultanas/ or raisins
small tub of cherries
4 oz sugar
8 oz gf flour
2 t gf baking powder

Method:

Pour tea into bowl, add fruit, leave to soak for about 1 hr.

Preheat oven to gas 5, 190C. Oil 2 lb loaf tin.

In large bowl – beat together sugar/eggs until pale and slightly thicker.
Add flour, b powder, fruit, tea, mix together.

Spoon mix into loaf tin and cake in centre of oven for about 45mins-1 hr.

Serve sliced , with a little butter if required.  Will keep a few days.
