Gluten Free Fassoulatha (Greek Soup)

This is a wonderful wintertime soup.

Ingredients:

4 cups butter beans
1 large onion, chopped
1 small can (15 oz.) chopped tomatoes I use Italian stewed)
2 Tbls. Tomato paste
1 cup chopped celery, including leaves
1 cup diced carrots
1/4 – 1/2 cup chopped parsley
1/3 cup olive oil (do not omit!)
1/2 tsp. sugar
salt and pepper to taste

Method:

Combine all. Bring to a boil, lower heat and simmer 30 to 60 minutes.
