Gluten Free Crustless Quiche Lorraine

The other recipe I have I have had for years and I believe it came out of an old microwave book but I am not sure.
I like it because I don’t need to worry about a crust.
Ingredients:
½ lb bacon cooked and crumbled –I use turkey bacon
1 cup shredded cheese swiss or any type – I use Soy
¼ cup minced onion
4 eggs
1-cup evaporated milk – soy milk works well
1/8 tsp cayenne pepper
Method:
Sprinkle bacon, cheese and onion into a 9” glass pie plate
Beat eggs, milk and pepper in large bowl and pour over bacon mixture.
Cook in microwave for approx 8 – 11 minutes on med high (level 8); or until knife inserted in centre comes out clean. I find it usually takes 11 minutes but this will depend on the wattage of your microwave.
Let stand 1 minute before serving.
