Gluten Free – Creamy Carrot & Coriander Soup

For those who don’t like carrots don’t judge this one until you’ve tried it. It’s Delicious!! – Serves 8.

Ingredients:

1 kg carrots
2 medium onions peeled and chopped
2-3 tabsps oil
2 tabsps castor sugar
2 litres vegetable stock (if using stock powder 1 teasp per cup)
2-4 tabsps fresh coriander (or 2-4 teasp ground coriander)
Salt & freshly ground black pepper
8 talsps thickened cream or natural yogurt

Method:

Heat oil in large saucepan. Gently fry the onion & sliced carrots for 5-6 minutes, stirring.
Add sugar & stock & bring to the boil. Cook gently until carrots are soft.
Stir in coriander. Cool
Liquidize until smooth.
Season to taste & reheat. Garnish with cream or yogurt.
Note: Can be made day ahead without the garnish.
