Gluten Free Corn Meal Pasta

Here is one of my favourites – For one person:

Ingredients:

One serving of corn meal pasta (I use the broad noodles) – cook al dente
as indicated on the package.

Method:

Heat one table spoon of organic virgin coconut oil in a large non-sticking pan.
Add some thin slices of smoked ham – and fry a little.
Add well-drained cooked noodles and pour 3 whole eggs slightly beaten over the mixture.
Add pepper and salt to taste.

Enjoy with a large bowl of green salads with herbs.

A very cheap/ easy and quick nutritious meal!
