Gluten Free Choco-Chip Cookies

My 16 year old daughter has recently been diagnosed with celiac disease and I discovered and adapted this recipe to be gluten free. It’s a really great recipe and I’ve made several batches in the last few days. Hope it can be enjoyed by all:

Ingredients:

1 cup brown sugar 2 eggs
1 cup peanut butter 1 tsp vanilla
2 tbls white rice flour 3/4 cup chocolate chips (any flavor chip you like)
1 1/2 tsp gf baking soda 1/2 cup chopped nuts of your choice (if desired)
1/2 tsp salt

Method:

Heat oven to 350 degrees. In a large bowl mix brown sugar and peanut butter. Add rice flour, baking soda and salt. Mix well. Stir in eggs and vanilla and then the chips and nuts.

Drop by rounded teaspoon onto greased cookie sheet. Bake 10-12 min until golden brown. Cool on pan for a few minutes and remove to wire rack to cool.

Make sure you have plenty of milk on hand, these cookies are rich and DELICIOUS!!!
