Gluten Free Carrot, Rice and Nut Loaf
This is a favourite recipe of ours – a vegetarian, easy to make loaf.

Ingredients:
Two beaten eggs
Two tablespoons cold pressed oil
One teaspoon lemon juice
One half-teaspoon sea salt
One and a half cups grated carrots
One cup cooked brown rice
One cup ground walnuts or almonds
Two tablespoons chopped red or green capsicum
One tablespoon chopped onion
Method:
Combine all ingredients, stir well.
Pack tightly in a well-oiled loaf dish and bake in a 200 degrees Celsius oven for 40 minutes.
Garnish top of loaf just before serving with finely chopped parsley.
