Gluten Free Carob Almond Cookies
Hi Between my husband and myself we can’t tolerate, gluten, sugars, dairy, yeast. I’ve included a couple of our favorites.
I substitute-Baking powder – with vitamin C crystals.
Sugars of any kind – with applesauce, or stevia and on occasion Xylitol or I’ve even completely elimated the sweetener (sugar) from the recipe butter/margarine – with olive oil or coconut oil.

Ingredients:
1/3 c almond butter
2 T. oil
1 and 1/2 large apples
2 eggs
1/4 tsp unbuffered corn-free vitamin c crystals
3/4 tsp baking soda
3/4 cup carob powder
1/4 tsp sea salt
1 and 1/4 cup brown rice flour
Method:
Oil two cookie sheets and preheat oven to 350 degrees.
Chop the apples into small chunks and put in blender. Add almond butter, oil, eggs, vitamin C crystals, puree all this together.
If more liquid is needed to make the puree add a bit of water.
In a separate bowl combine the flour, baking soda, carob powder, salt, mix well.
Then add the puree to the dry ingred. Mix this till well blended.
Drop by rounded tablespoon onto cookie sheets. If desired press an almond on top of each cookie.
Bake 350 for 10-12 minutes. Cookies are done when toothpick inserted comes out dry or slightly moist.
Allow to cook 5 minutes before removing from cookie sheets.
