Gluten Free Biscuits

Ingredients:
1 cup of rice flour
¾ cup of potato starch
2 teaspoons of granulated sugar
2 teaspoons of gluten free baking powder
¼ teaspoon of salt
1 teaspoon of Xantham gum (optional)
4 tablespoons of butter
2/3 cup of water or milk
Method:
Measure first 6 ingredients into a medium bowl. Stir well.
Cut or rub in butter until crumbly. Add the water. Stir until you can form a ball. Knead 6-8 times on rice floured surface.
Roll or pat a scant 1” thick. Cut into rounds with 2 inch (5cm)
biscuit cutter. Arrange on greased baking sheet.
Bake in 350F oven for 15 minutes. These do not brown much.
Cool on rack. Makes 10 biscuits.
Currant Biscuits: Add ¼ cup of currants to dough.
Cheese biscuits: Add 1/3 cup of grated sharp cheddar cheese to dough.
