Gluten Free Banana Muffins

Hi Between my husband and myself we can’t tolerate, gluten, sugars, dairy, yeast. I’ve included a couple of our favorites.

I substitute-Baking powder – with vitamin C crystals.
Sugars of any kind – with applesauce, or stevia and on occasion Xylitol or I’ve even completely eliminated the sweetener (sugar) from the recipe butter/margarine – with olive oil or coconut oil.

Ingredients:

1 C rice flour
1 tsp vit. c crystals
1/2 C oatmeal
2 eggs
1/4 c. oil
1/2 tsp. cinnamon
3/4 c. raisins (Optional)
1 tsp. baking soda
1/2 tsp sea salt
1 1/2 C. ripe bananas or crushed pineapple

Method:

Mix dry ingredients together. Mix wet ingredients. Mix both ingredients together till just mixed.
Put in greased or paper lined muffin tins.
Bake 400 degrees for 20-25 minutes.
Yield a l dozen. You can use this recipe and substitute with applesauce, berries etc.
