Gluten Free Apple Streusel Coffee Cake

Hi, my name is Lindsay Chamberlain, and I have celiac disease and am allergic to milk as well!

Ingredients:

Topping:
In a very small bowl, cream together and set aside:
1/4 cup raw sugar
2 tablespoons rice flour
1 teaspoon cinnamon
2 tablespoons softened butter

Batter:
in a medium size bowl, stir these dry ingredients together:
1 cup rice flour
2 tablespoons baking powder
1/2 teaspoon salt

Now cream together the following in a large bowl:
1/3 cup softened butter
1/4 cup raw sugar

Method:

Stir in:
1 egg
Then add:
3/4 cup dairy free milk

Add the dry ingredients to the wet ingredients and stir until just combined. Pour batter into a greased round cake pan. Sprinkle topping evenly over batter. Now add thin slices of apples and place on top. Bake at 350F for 25-30 minutes. USUALLY TAKES MUCH LONGER IN OVEN.
