Gluten Free Almond Biscuits
Hi Peter,
I have just made these biscuits and I think they are great! I have only been on the gluten-free diet for 2 weeks and I am finding it very difficult because I have a very sweet tooth—but I’ll get there.
From – Val Sing
Ingredients:
250gm (8oz) ground almonds
1 3/4 cups icing sugar
1/2 cup desicated coconut
100gm flaked almonds (slightly toasted)
2 egg whites
Method:
Mix all dry ingredients together. Add egg whites (not beaten).
Place spoonfuls onto baking tray and flatten slightly. Mix 1 teaspoon lemon essence with the egg yolks and brush mixture over the biscuits before baking. Leave the biscuits standing for 1 hour before baking–it helps to dry them out a bit. Cook in oven 180c (fan forced) for 15 minutes or until golden brown. Leave them on tray until cooled. Store in airtight container.

PS–you can add dried fruit or whatever nuts you like or even use ground hazelnuts instead of walnuts.
